It started with selecting and developing relationships with small-scale heritage ranchers and slaughterhouses around the country and building a transportation network to deliver the freshest meat possible. But that’s just the beginning.

In order to make use of entire animals (instead of just popular cuts of meat) and keep inventory moving quickly, D’Artagnan added two new distribution channels in addition to its original restaurant sales: supermarkets and direct-to-consumer e-commerce. That strategy not only solved the problem of “selling the whole cow;” it also got the company through COVID, when restaurants shut down.
